I started making hummus from scratch about a year ago, and don't plan on ever going back to the commercially made stuff. I like to cook the garbanzo beans from scratch, too, but sometimes there just isn't time, so a can of cooked garbanzo beans will do just as well. Sometimes I even can my own beans, which saves a lot of time later...but that's a post for another time.
Shane never showed much interest in hummus before I came up with this recipe (it's based on several others I found here and there), but now he's a hummus convert!
Annie's Homemade Hummus
3 cups cooked garbanzo beans
1 Tablespoon minced fresh garlic
1/4 cup diced onion
2 Tablespoons extra virgin olive oil
1/3 cup fresh lemon juice
1/4 cup tahini (sesame paste -- available in health food and ethnic stores)
1 teaspoon ground cumin
2 teaspoons garlic pepper seasoning
2 tablespoons diced pimiento or roasted red pepper (optional)
Paprika for garnish
Place all ingredients in a food processor and process until smooth and well-blended.
Spoon into serving bowl. Drizzle with more olive oil (I didn't for this photo) and/or sprinkle with paprika for garish. Serve with warm soft pitas or pita chips.
Makes 3-1/2 to 4 cups of hummus.
